Why Milky Mushroom is the King of Summer Cultivation

Milky Mushroom (Calocybe indica) is native to India and is one of the few gourmet mushrooms that thrives in warm, tropical temperatures between 30°C and 38°C. Unlike Button mushrooms which demand heavy air-conditioning, Milky mushrooms allow farmers across Southern and Central India to produce bountiful harvests during peak summer without high electricity bills.

Key Advantages of Milky Mushrooms

  • Long Shelf Life: Lasts 4–6 days at room temperature and up to 14 days under refrigeration without losing firmness.
  • High Yield Potential: Biological efficiency easily reaches 100% to 140% of dry substrate weight.
  • Excellent Firm Texture: Fleshy white caps and robust thick stems, preferred by commercial restaurants and hotel kitchens.

Step 1: Substrate Preparation & Spawning

Paddy straw is the ideal substrate. Chop straw into 2-inch bits and pasteurize using boiling water (80°C for 90 minutes). Drain till moisture reaches 65%.

Pack cylindrical polythene bags using 3% to 4% wheat-grain or sorghum spawn. Incubate in the dark at 28°C–32°C for 18 to 22 days until the substrate is thoroughly colonized by dense white mycelium.

Step 2: The Critical Casing Technique

Unlike Oyster mushrooms, Milky mushrooms require a casing layer of nutrient-poor, porous soil on top of the colonized bed to induce mushroom fruit body formation:

  • Casing Soil Mixture: 2-year-old decomposed Farmyard Manure (FYM) mixed with garden loam soil or coir pith in a 1:1 ratio.
  • Sterilization: Drench the mixture with a 4% Formalin solution or steam pasteurize at 70°C for 2 hours.
  • pH Adjustment: Add agricultural lime or chalk powder (CaCO3) to elevate the casing soil pH to 7.8 – 8.2. Acidic casing causes bacterial blotch and prevents primordia formation.

Cut the top of the colonized bags and apply a uniform 2 to 3 cm layer of moist casing soil over the mycelium.

Step 3: Fruiting and Climate Management

Keep the casing layer moist by light misting. Maintain:

  • Growing Room Temperature: 30°C to 35°C.
  • Humidity: 80% to 85%.
  • Ventilation: Generous air circulation with 4 to 6 fresh air exchanges per hour.

Small white pinheads appear in the casing soil 8–10 days after casing. They develop into heavy, fleshy mushrooms ready for harvest within 6–7 days.

Commercial Economics

A standard 1 kg dry straw bag yields 1.0 to 1.3 kg of fresh Milky mushrooms across two flushes. With retail prices between ₹180 and ₹260/kg in Tier-1 and Tier-2 Indian cities, Milky mushroom cultivation during summer provides growers with uninterrupted, lucrative cash flows.
